Topic:  Summer Treats With Less Sugar

Summary:  If you're looking for a summer treat without all the sugar, check out these recipes from USU extension services.

  • In the past 30 years added sugar intake has steadily increased.

  • On average, Americans eat 32 teaspoons of added sugar each day.

  • The maximum recommended amount of sugar added for a 2,200 calorie diet is 12 teaspoons per day.

Berry Parfaits

1 small pkg sugar free gelatin (any berry flavor)
1/2 cup cranberry juice
1/2 cup frozen low calorie whipped topping

Prepare gelating according to package directions for the speed set method, substituting cranberry juice for cold water. Before gelatin sets, pour gelatin into blender; cover and blend a few seconds; scrape down sides. Add whipped topping and blend a few more seconds. Pour mixture into paper cups or plastic containers. Cover and chill until set, about one hour. Variations-- try with various gelatin and juice flavors. About 2 grams sugar per serving from the fruit juice.

Fruit Smoothies

1 cup plain yogurt or lite flavored yogurt
1/4 cup milk
1 cup fruit of choice
1 cup ice cubes

Blend yogurt, milk, and fruit in blender. Add ice cubes one at a time until slushy. Pour into glasses and serve. Makes about four servings (3/4 cup each). About 15 grams natural sugar from dairy products and fruit.

Low Sugar Snow Cones

Shaved ice
Sugar free punch or 100% fruit juice

Shave ice. Drizzle sugar free punch or fruit juice over ice; for more intense flavor decrease the amount of water in the punch or use undiluted thawed juice concentrate. If made with sugar free punch, 0 grams of added sugar; if made with fruit juice, 15 grams of natural sugar for each 1/2 cup of juice.

Pudding Pops

2 cups cold milk
1 small pkg any flavor sugar free pudding
1 cup lite whipped topping

Beat pudding and milk for 1 minute. Stir in whipped topping. Spoon into paper cups; insert Popsicle stick in center. Freeze for 4 hours or until firm. To release pop from cup, run cup under warm water for a few seconds. Makes 6 servings. Approximately 5 grams of natural sugar from milk.
